| A·S·T·A eismann GmbH has developed a vacuum and pressure-resistant cooking and cooling system especially for fruit processing. The central column creates an optimal ratio of treated volume to heating and cooling surface. The agitator runs in opposite directions, therefore the mixing is soft and efficient. At the same time, the mechanical shearing prevents the product from sticking.
For a more efficient cooling the vessel works under vacuum; the product boils and the exhaust vapors are cooled by a tubular exchanger; and finally the condensed liquid is sent back.
